Roasted Chicken

as promised. i made these for lunch today.
















Rosemary & Blackpepper Roasted Chicken

1 bird chicken
1 tbsp dried ground Rosemary (i use Italian mix herbs i.e. rosemary, thyme, oregano, basil, marjoram)
1 tsp black ground black pepper
3 tbsp black pepper sauce ( i use PAWADA blackpepper sauce only)
2 tbsp olive oil ( i subsitute with cooking oil)
3 cloves garlic (kisar or tumbuk halus)
salt to taste

marinate chicken with all the above ingredients for 45mins to 1 hour.
lightly grease your baking tray and grill the chicken for 45mins to 1 hour under 220degrees. or until the meat fully cooked.

Blackpepper Gravy
Do not throw away the juices that comes out from the chicken. Pour into a saucepan, add 2 tbsp butter, let it melt under medium heat. Add 1 tbsp flour, mix well and let it simmer for 2 mins. Pour 1 1/2 cup warm water, mix well for 2 mins. Add 1 tsp mix Italian herbs, 1 leaf dried bay leaves (for flavour), 3 tbsp blackpepper sauce or 2 tbsp black pepper sauce and 1 tsp ground blackpepper and salt to taste. Mix well and let it thicken under medium heat for 6 mins, stir from time to time.
you may remove the bay leaf immediately. if you prefer stronger flavour, leave them in the gravy.

Grilled Potato
5 potato (cut into strips)
1 tbsp olive oil ( i subsitute with cooking oil)
1 tbsp ground dried basil
1 tbsp hungarian paprika powder
salt to taste
mix all the ingredients, spread on a baking tray. Grill under 200degrees until golden brown.
and the result of today's marathon cooking, my oven is now will have to be put to rest due to over utilised. sob... sob... there goes my baking frenzy.

Cooking Cravings

I was struck by a cooking fairy. She cast a spell on me, made me had this craving for cooking.

Although my body ached and haven’t fully recovered from the hectic journey early of the week, I just cudnt push away my cooking craving that’s driving me crazy selagi aku tak masuk dapur and do sumthing. What’s more yesterday we were out of electricity supply from morning til 8pm. It doesnt hamper the insanity inside me one bit.

I wanted to make strawberry muffin. I bought some fresh strawberries on Friday and it’s not as sweet as the one I bought last time. So I decided to put it for better use and make strawberry filing for the muffin. In the dark, pureed the berries with spoon (no electricity so everything have to be done manually), transferred it into a sauce pan, squeeze two wedges of lemon, put 1 cup of castor sugar and let them boil until it gelatinised.

The electricity came at around 8pm. After dinner I start baking for the muffin. It was my first try… and I’m satisfied with the result.

Muffin sedang menembamkan diri dalam oven … eh apsal muffinku putih melepak? Heheh cud be because I omit the cinnamon powder from the original recipe?

Errr … while muffin orang lain bentuk bulat, I purposely let my muffin fill up the papercups sesuka hati… hehe my kitchen is short of baking utensils, so ignore the shapes ya?

Cheeky Way To Make Lasagna

i owe a few readers yang asking for the recipe... uh uhhhh... i'm not an expert at cooking, so frens if you guys wonder how i make the lasagna, this is my way(cheeky way) of making lasagna. kalau boleh semua pun nak pakai instant... hehe

White Cheese Sauce
3 tbsp butter
2 tbsp wheat flour
2 cups low fat milk
1/2 cubed chicken stock
¾ cup chopped cheddar cheese
2 tsp dried mix herbs (oregano, basil, rosemary – McCormick’s)
or 2 tsp chopped oregano
1/2 tsp white pepper powder
1 tsp salt

Melt butter under medium heat, add in flour and let it simmer for about 2 mins. Pour in low fat milk, add cubed chicken stock, let it simmer for 6 mins until the mixture thickens. Quickly add cheese, mix herbs, pepper and salt. Mix well until cheese dissolved. Let cool.

Spaghetti Sauce
300gms mince meat/chicken
2 cups diced carrot
1 red onion - chopped
1/2 cup celery stick - finely sliced
2 ripe tomatoes diced
4 tbsp tomato paste (can be subsitute with puree)
1 sprig rosemary
1 cubed beef stock/broth
3 tbsp olive oil/cooking oil
2 tbsp sugar
1 tsp salt (less is better)

In a medium pot, heat olive oil/cooking oil. Sautee carrot & onion until carrot half cooked. Add mince meat and diced tomatoes. Let the mince meat cooked for about 5 mins until its juices runs clear. Pour in the tomato paste/puree, mix well until the mixture simmer. Add in cubed beef stock/broth and 1.5litre water and rosemary sprig and salt & sugar. Let it simmer under medium heat until the sauce thickens.

Preparing the Lasagna
1 box of instant lasagna sheet (large or half size)
½ cup of shredded cheese (mozzarella)
white cheese sauce
spaghetti sauce

Lightly glazed the baking foil with margarine. Pour one layer of spaghetti sauce, place one layer of lasagna sheets, continue with one layer of spaghetti sauce, 3 tbsp of cheese sauce and lasagna sheets. Repeat the whole process until you finish making 43 layers. The top layer must be covered with cheese sauce only, make sure it is enough to cover the whole lasagna sheets. Tossed with shredded cheese.

Ready to bake in the oven under 180ยบ for 35-40mins.


Kalau tak pakai instant sheets lagi sedap... rasanya lah...hehe. Preparation time: ntah agak2 dalam 1 1/2 hr kot? Nasib ada bibik, ada jugak orang nak kemas dapur...heheh ;)

Baking Experiment

I made beef lasagna the other day, baked in a loaf pan. It was my first try; I didn’t know how it will turn out. I just followed the recipe found at the back of the instant lasagna sheets packing. it was a success!

Hubby like it, my kids couldn’t stop eating and keep on asking for more. Fahmi was shouting “nak lagi…” and wouldn’t stop until I put another helping into his plate. And I, was so happy that they all like my cooking.

Dah lama teringin nak buat lasagna sendiri, but we dun have an oven. Last 3 weeks I went back to my mom’s house and took back the small oven that I bought more than 3 years ago. Mom don’t need it anyway, she got her own big oven, not that she baked that much. I was the one who did the baking for raya biscuits all this time.

If you notice in my previous entry i wrote down the last thing I bought was pre-cooked instant lasagna? ;) So yesterday, I made some more for dinner, this time using large lasagna sheets.

Start preparing the white cheese sauce myself, again thanks to the recipe at the back of the lasagna sheets packing. haha menjadi pun… ;) bibik masak nasi tengahari tu. Usually fahmi & yaya had their dinner early, around 6pm. So while baking the lasagna, I asked bibik to fed the kids. Surprisingly they didn’t want nasi, both refused to eat nasi and continue play with their toys. Poor bibik…

Lasagna siap masak pun dah almost maghrib. Hubby haven’t come back by then, he went out to the worksyop, our car need some service. So I decided to let the kids have their meal first…
